Extra Virgin Coconut Oil

This article discusses the health benefits of a diet rich in coconut oil

Like most people by now, you've probably heard some good press about coconut oil, more specifically extra virgin coconut oil, but your not quite sure what's good about it given the saturated fat content. Well, I'm here to set the record straight and hopefully get you to incorporate this miracle food into your diet.

Coconut oil contains a high amount of a particular type of saturated fat called a MCT or medium chained triglyceride. This is very different than the saturated fats that we find in animal fats and some processed foods. The body likes to preferentially use MCTs as energy and isn't likely to store them.
Another great reason to use coconut oil besides it's great source of energy is because of anti-viral, anti-microbial, anti-fungal, and anti-bacterial properties. Two of the main fatty acids responsible for these properties in coconut oil are capric and lauric acid.
Coconut oil is also great to cook with because of it's high smoking temp and ability to maintain the molecular structure of its fats while being heated so as to ensure proper absorption and bioavailablity when you ingest it.
You may eat 2-4 tablespoons of the stuff daily.
So to recap, coconut oil is a great energy source and is not likely to make you fat despite the high fat content. It has incredible immune enhancing effects and is great to cook with!

So I couldn’t find extra virgin but, I did find coconut oil. Got it at HEB. I wasn’t sure what to expect but, it cooked well and while I could tell it wasn’t the evoo that I normally use, I didn’t detect any flavor that was unpleasant. This is a winner. Thanks Joel!
