The incredible, edible egg. What a misunderstood super food! I bet most everybody's eyebrows raised when they saw eggs, the whole egg, as a nutrition tip!
Well let me try and do my part to set the record straight in terms of the cholesterol content and overall nutrient quality of eggs via Dr. Jonny Bowden.

Also in the yolk, are two essential nutrients, choline and phosphatidylcholine. I know, big word. Stick with me though. Choline is essential for cardiovascular and brain function and for the health of your cell membranes. Choline is actually a part of the very important phospholipid, phosphatidylcholine, which is important because without adequate phosphatidylecholine, both fat and cholesterol accumulate in the liver. Did you catch that? People are avoiding the egg yolks because of the cholesterol content, but the choline in the egg yolk actually help purge cholesterol from the liver!
I could go on and on about eggs, but I'd like to make just one more quick point, okay, maybe two more.
In a recent study, published in Cancer Epidemiology Biomarkers and Prevention, women that migrated from parts of China eventually to the United States, found that the women eating the most eggs per week, six vs. two, were least likely to have breast cancer. 44% less likely! That's huge!
Also, eating raw eggs will more than likely not make you sick from salmonella poisoning if they come from cage-free organic, omega 3 fed hens. Healthy chickens' eggs aren't contaminated. Actually, only .03% of the 69 billion eggs produced annually are contaminated at all!
Why eat eggs raw? Because the less you cook your eggs, the less you expose the yolk to oxygen thus the less cholesterol is oxidized within the yolk. This can also be done by poaching, boiling or mixing them in a smoothie raw.
